Lucky Bones serves Cape May's best (and only) Brick Oven Pizza!

Cape May's best Pizza browns it's cheese in an old world style brick oven found only at the Lucky Bones Backwater Grille. CapemayX.com met with David Craig, owner and operator of this new and hotly popular Cape May spot, to learn more about their unique method and to experience the oven heat first hand.
A few things caught us by surprise. First, Pizza making can be quite technical. Now I'm not sure what's happening during the retarded proofing of the King Arthur unbleached flour phase (see video interview), but who cares?. The talented chefs at Lucky Bones can worry about those details (and as always, it's the details that separate good from great). The only thing that really matters is having happy satisfied taste buds and Lucky Bones brick oven pizza delivers. We also learned they use their oven to cook up many other freshly baked and roasted products available on their menu including such tasties as roasted garlic and peppers to wildly delectable foccacia breads. The pizza certainly has plenty of company in the good taste department.
The most interesting part of the interview (we found) was when David shared a compelling vision for the future of Cape May pizza. Lucky Bones plans in the next few months to experiment with Brick Oven dessert pizzas. How cool is that? We're not even sure what that means but god bless out of the pizza box thinking that attempts to push the envelope on good taste. I regret that during the interview we didn't press David for more details about what they're planning because it really sounds interesting. So we'll just have to keep our taste buds at bay and wait till the new pizza concoctions go live.
